Its another weekend and time to make nutritious recipe for the family.
Nkwobi is a special delicacy from the Eastern part of Nigeria, made with Cow Foot ( called bokoto by the Yorubas). Today, we will talk about one of the ways I make Nkwobi
1. Cow Foot
2. Ugba (Oil bean)
3. Dry Pepper
5. Ehuru ( or ehiri)
6. Seasoning cubes( I use Knorr)
7. Palm Oil
8. Potash ( akanwu/ kanwu)
10. Nkwobi spice ( a combination of local spices blended together) You can find them in the market.
11. Onions for garnishing
12 Utazi leaves for garnishing
Cook the cowleg in just water until tender
You can use a pressure cooker to save time.
When tender, drain off water leaving just a little.
Add the ugba, pepper, crayfish, ehuriu, the local spice, seasoning cubes, salt and cook for about 5-7mins. And turn off the heat and set aside. Remember this is with very little water.
Soak or dissolve potash in little water.
Pour in the potash and water solution into the palm oil. I advise you sieve in the solution as the potash could be sandy.
Stir the oil as the colour of the oil changes into yellow and forms a thick consistency. This is called ‘ngu’ by the Igbos.
Pour the ‘ngu’ into the Nkwobi
Dish into a plate or the local ‘nkwobi’ plate and garnish with the onions and utazi.
